I just bought the 2Stone, it is amazing. The pizza was light, fluffy, chewy and so good! Check out my video of it in action.

Flour recipe in baker's percentage:

100% Bel Aria tipo 00 pizza flour
63% water
0.3% saf instant dry yeast
2.73% trapani sicilian sea salt

cold proof for 5 days

I'm making great pizza say's my family on a stone in the house oven. BUT! That's one good looking pie on this video. I will buy a 2stone real soon.

Yes you're right the stone is the opposite of what Fibrament recommends. The reason they do is only because it is easier to pick up with the bevel that way. They do not recommend that the stone comes in contact with open flames. They have approved of this method . I have had a user turn it around and with heavy use the stone deteriorated on the edges.

Looks great. Thanks so much for that flick.One question: Is that bottom stone the right way up? I know the Mfg of the stone suggests the larger surface, up, along with its rough texture. It would also give a larger baking surface. This is the first pic I've seen close enough to notice that.
