can you cook on the 2stone pro with a screen or pan ? if so what would be the difference vs being on the stone ? also has anyone tryed to cook a 18 oz dough on the 2 stone ? also willard do you have pizza pics of the musical festival's pizza's ?

You can use a screen or a pan, and you will need to bump up the temperature by about 100 deg to get the same results as when you go on the stone directly.
When you get the hang of it, going directly on the stone gives you great results. The heat will penetrate the dough faster when you go on the stone.
18 oz sounds like an awfull lot of dough. Even when you use an 8-10 dough ball the crust really exspands in the 2stone so you may end up with way to large a crust.
