I've got a few knicks in my Oven's paint-job. I was planning on buying some high-temperature black spray paint at Home Depot (Krylon, or equivalent) for touch-up. Do you have any recommendations and/or advice for touching-up paint?

Yes that's what you use. either flat or satin works just spray very fine and a thin coat since the
the spray can version uses a very powerful thinner that can lift the old paint if it's applied to thick.
