OK - here's stupid question #1: Which side of the Fibrament stone goes up? The instructions that come with the stone indicate that the baking surface is the larger diameter side, but many of the 2Stone pictures and videos (but not all) look like the larger side is down. Even the Fibrmanet web site is confusing. Their logo shows the small side up, but their grilling instructions ( http://www.bakingstone.com/grilling.php ) appears to show the stone both ways! So which is it?

Yes the instructions are printed for the home oven user, as such the only reason they recommend the rough side up is so you can pick it up with your fingers. oon the 2stone you want to turn it the other way. That way the stone is more protected from the open flame. -wg

Thanks, Willard! After cooking 3 or 4 pizzas big-side-up, can we flip the stone now, or should we leave it as-is?

yah, no problem, and when you want to clean it just run the oven real hot for a while and
your stone will turn almost white again, this happens at about 900-1000 deg. -wg
