2Stone friends

Artisan pizza & flat bread connoisseurs.

My wife, Sharon, and I are new 2Stone Oven owners - and we love it! I'm impressed with the design of the oven - it's simple, efficient, and elegant. I'm not positive, but it appears we have a "2nd generation" 2Stone Oven. When we first considered buying a 2Stone oven, it appeared to be a unit that sat on top of a Bayou Burner. In preparation for an oven purchase, we bought a Bayou burner some time ago, but didn't buy our oven until recently - after the 2Gen design already included the burner. So now we have a spare Bayou burner. No big deal - the more outdoor cookery equipment, the better.

It now appears the new Inferno design more closely resembles the 2Stone oven - but with a few new features. Willard - is that the regulator knob mounted on the front? And the new Inferno design can be upgraded later with a gear motor. Is the same true for the 2Gen oven? I'm especially intrigued with the stone encasement. What kind of stone material do you recommend for encasing an oven or Inferno?

Although most of the posts and pictures here are of our great 2Stone pizzas, I thought a little oven technical discussion might be fun, too. Hope you agree -

Tony

Yes it has evolved but the basic oven inside is identical to the fist ones.
In Lew of the fact that we have so many people wanting to upgrade to a motorized hearth
we made the change so the axle comes mounted in a bearing ready to accept the motorized assembly.

In terms of the stone. the standard method of building with stone today is by having a sup layer where the face stone is in effect glued on with mortar, You should be able to use any type of face stone as long as you have a couple of inches between that and the oven. Otherwise the brick yards sell a typical insulation for fireplaces that can be used which is good to about 1200F which is more than enough for that application. So the sky is really the limit in terms of how you design the base as long as its finished off at the top so it will accept the barrel top which can be custom ordered to fit what ever your dimensions are. The substructure can be made from block or covered framework, using cement board with a stretched metal surface so the face brick mounts securely. All of this material is redily available at your local homecenter or at a brick yard that specializes in stone, brick and masonry. -wg
