Willard,

I am in the pizza business and am interested in your 2Stone Inferno for commercial use. I wanted to open a new pizzeria with a wood-fired oven, that is until I stumbled across your website and youtube videos. I have a few questions for you:
Are any of your customers using your 2Stone for commercial use?
How quick is the temperature recovery, if I want to bake at 600-700 degrees?
Do your motors come with a warranty?
Have you tried baking other food items on your 2stone (lasagna, steaks, roasting peppers, etc)
I currently use pizza screens for my conveyor ovens. Have you ever tried baking pizzas in your 2Stone with pizza screens (at least to initially set up the pie)? If so, what are your observations?

I welcome any additional advice you can give, in regards to using the 2Stone for commercial use.

Welcome to the forum. Hope I can answer most of your questions.

Yes we have several customers using them for commercial use. The preheat time is about 10 min and if you use the turbo top there is little to no recovery time. There is a one year warranty on the oven, 3 months on the gear drive and none on the stones. So far the main thing I bake are pizza, pita bread and other flat breads. It will also roast mushrooms, peppers etc. etc. very well on screens. I do fresh mushrooms all the time with great results. Screens work great also if you are used to that. I used screens for a long time when I first started, When using screens you just need to bump up the stone temp a bit, and you can easily pull it off the screen onto the stone since the access to the pizza is
better than any oven out there and there is no door to open and close. One oven will do about 25 pies an hr. so 50 an hour with two which is what works well when you are working groups of people.
