Thanks to you for being persistent about bread making
in the 2stone. I found it works very well with the lower profile
of the smaller buns because you are able to get the same great
oven spring you get with pizza in the 700F range. The bake time is
a little over 6 min and they can be misted 3-4 times to retard the top
bake and give it the crisp crust you get with steamed crust.
The link you posted on the article: The Perfect Bread" by Mikael Jansson
was great and really explains in detail what you can do. As he notes you get the
best results if you are able to use steam in the baking process
I just did these hamburger buns on the 2stone.
I started out with 2 pizza dough balls and cut them
each in half. It's nice to have a way of using up the
dough when it starts getting away from you in the fridge.
These had about a 4 day rise and needed to be used up
After they were floured well I put four of them on the 12" peel
and was able to tranfere all of them onto the stone at once.
the buns look really great !, I get that real "bbq picnic" feel from them ! rustic looking, kind of reminds me of a new sandwich that McDonalds has up here in Canada. The buns are kind of like sourdough buns, but the shape is almost like the ones you baked up here.
Great photography too, that one of the fully dressed burger really looks great with all that green !
I know I might seem hard headed, but I took your prodding about bread and it really works well when you make a smaller bun at high heat with mist. To be honest, you can only eat pizza so much, and there are a lot of other good things you can do with the 2stone that break things up a little.
I agree with you, there are many more things to try than just pizza. If you took a poll all over North America, there are 1000x more break bakers than people who make pizza. I had frequented a lot of break making forums in my time, so I've seen just how many break making lovers are out there. When you look at it as a whole, pizza makers are a very small slice of the "bread" making community.
Thanks for the complement, actually my wife and son are the real cooks, I pretty much confine myself to the grill and the 2stone. And truth be told everyone is pretty skinny and fit in my family except for me! I'm an avid Kayaker though so I hope as the weather warms up and I get out more I will loose a few lbs. - willard
